As of January 17th AWS has provided the ability to create an MP3 output type in MediaConvert and I'm hoping to have this option added to our current flavors generated.
A lot of our readers have been asking for this functionality for various reason like listening to the audio while driving or for those who have speed and/or bandwidth usage restrictions.
